Pickled Beet, Goat Cheese & Sweet Potato Hand Pies

Ingredients
- 2 Tablespoons olive oil
- 1 large sweet onion, finely diced
- 1/4 tsp salt
- 4 cups chopped sweet potatoes, ½” pieces
- 2 Tablespoons honey
- 8 ounces goat cheese, crumbled
- 1 jar (16 oz) Aunt Nellie’s Diced Pickled Beets, drained
- 2 packages (11.6 oz each) premade empanada dough, thawed
- 1 egg, beaten
Directions
Heat a frying pan over medium heat. Preheat oven to 375°F.
Once hot, add oil, onion, and salt. Cook for 5 minutes or until soft and caramelized.
Add the sweet potatoes and cook 10 minutes until tender.
Add the caramelized onion and sweet potato mixture to a medium bowl along with honey, goat cheese, and beets. Mix until well combined.
Lay one disc of empanada dough on a clean surface. Place 2 tbsp of filling onto the middle. Fold over the dough, sealing the edges with a fork. Repeat with remaining dough and filling.
Place the hand pies on a parchment-lined baking sheet. Brush the tops with the beaten egg. Bake for 20–25 minutes, or until golden brown.
Let the pies cool 5 minutes before serving. Enjoy warm or at room temperature!
