Super Simple Side: Serve carrots warm as a side dish or dress them up with fresh pineapple chunks and toasted pecans for a sweet-savory side dish.
Ginger-Carrot Soup: Puree carrots and liquid (leave slightly chunky or puree until smooth). In large saucepan, bring about 1 cup vegetable or chicken broth to a boil. Add shredded or minced fresh ginger; reduce heat and simmer about 5 minutes to infuse ginger flavor into broth. Stir in pureed carrots and heat through. Add additional broth for preferred consistency if needed.
Fruity Carrot Smoothies: Puree carrots and liquid. Add 1 to 1 1/2 cups frozen unsweetened fruit (mango, pineapple, strawberries, peaches, etc.) and blend until smooth. If desired add fruit juice, unsweetened or vanilla nonfat yogurt, milk, soy or almond milk to make a less thick smoothie. A dash of ground cinnamon is also a delicious addition.
